解放前,铁谢村当时称铁谢镇,流传着“金铁谢、银白鹤、孟津城里烂簸箩”的民谣。因为铁谢是黄河南北的重要交通要塞、水旱码头、车船马龙、客商云集、一派繁荣景象,大街小巷都是生意门面,光饭馆十几家,最出名的是“大红馆”。为了方便码头上的扛包装卸工和小商小贩,“李氏羊肉汤馆”于1910年11月在李西连创始人的家门前开张营业。李西连十几岁曾在陕西羊肉汤馆学徒,深得师傳厚爱,掌握了羊肉红烧、爆炒、清炖等技艺,又得到羊肉大骨汤配料的配方,所以李家的羊肉汤味鲜汤肥、经济实惠。
铁谢李氏羊肉汤从选羊、煮肉、熬汤、制作工艺奇特、调料配制独特考究,经过一代代传人的反复实践改进,每次熬汤从用料到调味都各有定式,严格不乱,非手把手的亲传,即久事灶台的名厨亦难相仿。
