李龙锡小米黄酒

小米黄酒是一种中温性的药酒,由小米和中药发酵而成。在古代,小米黄酒是中药的药引,不但能提高药的疗效,还有解毒、矫味、保护肠胃的作用。

中医的方剂有汤、丸、散、膏、丹、酒、露等十余种剂型。其中酒剂,古称“酒醴”,亦称“药酒”。繁体的“醫”字中即能看到“酒”的雏形。

最早见于文献的,是《黄帝内经》中的“鸡矢醴”,《金匮要略》中亦有红兰花酒的记载。不同于白酒、葡萄酒的是,黄酒是用糯米或小米发酵而制,性味温厚,既是药品又是饮料和食品。

小米黄酒含有21种氨基酸及大量维生素,其中8种元素是人体自身不能合成而又必不可缺的。

中医认为黄酒能通血脉、利肠胃、润皮肤、养脾气、护肝胆、除风湿、祛塞、补血、养颜,具有与中药天然揉合的因子和亲和性。作为药引,不但能将药物的有效成份溶解出来,还能将药效引导到有关经络和脏腑而祛除身体的疾病。千百年来,黄酒的药、食两用价值,体现得越来越充分。李时珍曾在《本草纲目》中指出,“诸酒醇醴不同,唯米酒而入药用。”

另外,还有70余种药酒需要黄酒作为酒基而配制,它广泛地使用在内、妇、外等各种剂型中。
