洛阳的汤种类繁多,其中豆腐汤最为特色的要数张氏兜福豆腐汤。其特色有三个:一是豆腐讲究:鲜豆腐方正,不破不损,夹一块入口,入嘴即化,满口留香,而油炸豆腐则松软皮实,外紧内酥,又透着集焦香与软嫩于一口,黄白两色,与小葱之嫩绿,辣椒之鲜红相得益彰,极香的葱油配上新鲜的姜汁让一碗素汤变得口感极富层次。二是用料讲究:严格按照祖方选料配料,精研细磨,分季节选配。三是该汤能增进食欲,饱腹耐饥,回味悠长。张氏兜福豆腐汤的史载大概可追溯到朱元璋佳话里的“珍珠翡翠白玉汤”。当时的“珍珠翡翠白玉汤”还是宫廷菜,寻常人家很难吃到,时代变迁,豆腐汤因汤鲜味美、健康养生的功效,引起了大家的关注和认可,在“汤”文化盛行的洛阳,豆腐汤占有举足轻重的地位。
