羊肉汤制作技艺(宋记羊肉汤制作技艺)

上世纪30年代,吴达滑从西部逃荒到洛阳白沙乡,在西大街的宋学章家落脚,在得知吴达滑有做羊肉汤的祖传秘方和技艺后,俩人于19378月合作羊肉汤店开业,“宋记羊肉面馆”正式开张。“到老宋家吃面喝汤”成了很多到白沙经商、赶集人的习惯。1939年,吴达滑去世,临终前把做羊肉汤的秘方传于宋学章。后来,宋学章又把这门手艺传给儿子宋永福。新中国成立后,“宋记羊肉面馆”关门。宋永福在帮助白沙乡供销社组建了食堂后,被聘请到白沙乡镇食堂工作。2009年,宋永福之子宋秋发在伊川县豫港大道9号开办了“宋记老白沙羊肉面馆”,因口味传统正宗,开业后门庭若市,许多省内外的食客不远万里慕名而来。

In the 1930s, Wu Dahua fled from the west to Baisha Township of Luoyang, where he settled at Song Xuezhang s home in the West Street. After learning that Wu Dahua had the ancestral secret recipe, the two opened the Song Ji Lao Baisha Mutton Noodle Restaurant in August 1937. He passed on the recipe of making mutton soup to Song Xuezhang before Wu Dahua died in 1939. Later, Song Xuezhang handed down the cooking skills to his son Song Yongfu.In 2009, Song Qiufa, son of Song Yongfu, opened "Song Ji old Baisha Mutton Noodle Restaurant" at No. 9, Yugang Avenue, Yichuan County and soon a lot of guests from afar crowded in restaurant everyday. In 2010, a Taiwanese compatriot who went back to Yichuan after visiting Song Ji laobaisha mutton noodle restaurant talked amazingly about the flavor of his hometown mutton soup and Huoshao Bun which were exactly alike those in his childhood. When left, he took a dozen baked buns to Taiwan, saying"we must let the old brothers who have no chance to go back to the mainland to taste the flavor of his hometown".
