杜康酿酒工艺

杜康是中国酿酒的鼻祖,被历代酿酒者奉为酒神、酒祖。

杜康酒的发源地位于河南省洛阳南部汝阳、伊川两县的交界处,它北临伊阙龙门,南临伏牛山,距洛阳50公里,地处中原腹地,属山地丘陵盆地地貌。

三千多年前,杜康在这里偶然受到“空桑秽饭,酝以稷麦,以成醇醪”的启发,反复研试,总结出酿酒之秘,创造了以粮食(秫)为原料的酿酒技术,开创了我国白酒酿造的先河,奠定了中国白酒酿造的基础。自杜康开始造酒以来,民间酿坊林立,其酿酒技艺世代传承,历千载而不衰,终至形成了今日中华大地上品名众多、各具特色,洋洋洒洒,蔚为壮观的华夏酒文化大观园。

自杜康酿酒之后,大到政治、经济、军事、外交、礼仪、宗教、奠祀等重大社会活动方面,小至宴饮聚会、婚丧嫁娶,酒,作为重要角色,无不浸润其间。“慨当以慷,忧思难忘。何以解忧,惟有杜康”。魏武帝曹操留下的诗句及历代名人对杜康酒的钟情厚爱,更是开创了中国酒文化名人效应的先河。杜康酒酿酒技艺和酒文化始终伴随着华夏文明的进步而发展,并为华夏文明的兴隆昌盛做出了重要贡献。

1972年在周总理“复兴杜康,为国争光”的指示下,古老的杜康酿酒工艺得以传承延续,发扬光大。杜康酒曾被国家外交部定为“国宴用酒”和“馈赠外宾专用酒”,在海外华人聚居区和台湾被称为“思乡酒”。

Dukang Liquor is named after the village with the same name between Ruyang and Yichuan counties in southern Luoyang, Henan Province. More than three thousand years ago, Du Kang, legendary God of Liquor in China, was inspired by accidental distilled grains. After repeated research, the technique of liquor-making was advanced, with grains(Kaoliang)as its raw material. Dukang making laid the foundation for China' s liquor-making. Since then, local distilleries were seen everywhere and the techniques were passed down from generation to generation. Dukang has since been used in major occasions concerning politics, economy, military, diplomacy, etiquette, religion, ritual worship, etc. The techniques of Dukang-making and its culture have developed along with the Chinese civilization, and have made great contributions to China s prosperity. Dukang was once designated by the Ministry of Foreign Affairs as " State Banquet Wine" and " Gifts for Foreign Guests " . It was also regarded as "Si Xiang Jiu"(Wine of Homesickness) by overseas Chinese .ests".
